Mayonnaise

Making your own mayonnaise is easier than you think and healthier. If your Keto its a great way to get some extra fat into your diet.I could eat it by itself or dip some vegetables in it. A quick snack of rolled up meat and cheese is gourmet with homemade mayonnaise.Mayonnaise

2 yolks

Pinch of salt

1/2 teaspoon Dijon mustard

3/4 cup chilled olive oil

1 Tablespoon water

1 Tablespoon lemon

Directions

Add yolks, salt and mustard to bowl and start mixing.

Pour in olive oil slowly.

Add water it will help it emulsify.

Add lemon juice to taste.

You can make this in a blender but if your making this small amount a bowl and hand mixer will do. You can also use 1 yolk but I like 2. I also added extra mustard, that is why mine is very yellow.
